Pancakes are easy and tasty. But when it’s one oats mixed pan cake, we make it doubly healthy too! Oatmeal is something I came to know much later…I mean not a daily breakfast since childhood. So it took time for me to like it. Now we enjoy oats, but I love to experiment and try to make it tastier. My oats pancake is a slight variation of what I got from Easy 2 Cook Recipe.
What we need for oat pancake : Rice – 1 cup, Urad lentil – ½ cup, Oats – ¾ cup, Grated carrots, Chopped coriander & curry leaves, Finely cut onion & green chilies, Little oil and Salt.
Method: Soak rice, lentils and oats in water for at least 2 hours. Grind it together to make a smooth batter. Keep covered for about 5-6 hours (preferably prepare it in the night to make pancake in the morning). Add ½ tbsp salt and mix well. Heat oil on the pan, put half cup batter on it. Sprinkle the grated carrots, onion, chilies and leaves all over. Cover it for about 30 seconds. Open and flip it! Cover again for few seconds and it’s done! This pancake hardly takes any time to be finished… :)
