Healthy Colorful Vegetable Rice


If you are searching for some terrific one-item meal, that should be healthy to eat and good to look at, Vegetable Rice or Vegetable Biriyani is the perfect dish! Actually we are habituated to eat plain boiled/steamed rice with various curry, lentil soups and salads. But this one I learned from Active Cooking (TV show) a couple of years ago. Since then it’s a big hit in my home.


Ingredients: Long rice - 1 cup, Cut vegetables- 3 cups (carrot, green peas, cauliflower, cabbage), Curd- ¼ cup, Ginger-garlic paste – 1 tbsp, Olive oil- 3 tbsp, Lemon- ½ , Finely chopped mint leaves & coriander leaves, Salt, Cinnamon stick, 2 Bay leaves, Dry fenugreek leaves, Red chili powder.


Method: Marinate the vegetables with all the ingredients except rice. Keep side for 30 minutes. Half boil/steam rice. Heat 2 tbsp oil in a pan, pour the veg-mixture, sauté a little & cover the lid. After 3-4 minutes when it’s half cooked, add the boiled rice. Mix well. Cook with cover for 5 minutes more. Make sure not to burn even a little bit! Remove from heat & wait for 15 minutes before serving. Let the delicious aroma spread inside uniformly! You gonna love it I can bet!!!
